Chocolate Chip Banana Muffins
prep time: 10 minutes
cook time: 15 minutes
servings: 25-30 mini muffins
Ingredients
2-3 ripe bananas, peeled and mashed
1/3 cup natural (original) applesauce
1/2 cup mini chocolate chips
1/4 cup brown sugar
1 cup flour
1 egg
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
Directions
1. Preheat oven to 176°C.
2. Spray pan with non-stick cooking spray, or line with mini cupcake liners.
2. In a large mixing bowl combine mashed banana, applesauce, brown sugar and stir well (by hand).
3. Mix in baking soda, baking powder, salt and flour. Stir well.
4. Spoon into muffin tins and bake for 15 minutes.
